A Global Ingredient with Local Meaning: GROW on the Future of Gelatin
Gelatin serves as a cornerstone ingredient across food, pharmaceutical, and supplement industries worldwide. Yet its significance varies across regions, shaped by local dynamics, consumer preferences, and business priorities. To understand how gelatin is perceived and used globally, GROW conducted a comprehensive international survey among manufacturers across six countries: Brazil, France, Germany, Japan, South Korea, and the United States.
This survey inspired conversations with GROW's four regional associations: GME (Europe), GMAP (Asia-Pacific), GMIA (North America), and SAGMA (South America). These regional leaders share how gelatin is viewed, used, and evolving in their markets.
Global Consensus: Gelatin's Unique Position
Across all regions, the message is clear: gelatin is irreplaceable. The survey reveals that 77% of respondents recognize gelatin's upcycled nature, and 79% acknowledge its positive environmental impact.
Gelatin succeeds because it combines what manufacturers seek: it is natural, sustainable through upcycling, easy to use, and has unique functionality that cannot be replicated by alternatives.
This global alignment extends to gelatin's positioning as a healthy, naturally derived protein source. The high number of responses viewing gelatin as a healthy ingredient reflects both a long history of consumer and customers trust including growing scientific awareness of its nutritional benefits. This perception is likely rooted in the long history of gelatin consumption, which provides a high level of confidence.
Regional Perspectives: How Markets Differ
While global consensus supports gelatin's value, regional markets reveal distinct opportunities and challenges.
Europe: Natural, Trusted and Easy to Use
In Europe, consumers increasingly seek natural ingredients with proven track records — and gelatin fits perfectly. Michael Teppner, president of GME, explains that “especially in Europe, consumers are looking for natural ingredients which have been known for decades. Gelatin matches those requirements.”
The European market values gelatin especially for its alignment with sustainability and naturalness. In the supplement area, gelatin plays a critical protective role—as a natural capsule material that protects sensitive fillings.
For European manufacturers, beyond sustainability and naturalness, ease of use emerges as a decisive factor (52% in Germany and 39% in France associate gelatin with ease of use). The ingredient must be simple to work with while delivering consistent results. As Michael notes, “this is also reflected in the steady stream of newly launched gelatin-based products each year.”
Asia-Pacific: Sustainability Meets Innovation
In Asia-Pacific, a different catalyst is driving gelatin demand: rapid expansion of Sustainable Development Goals (SDGs) awareness. National initiatives and concerted societal efforts have elevated collective consciousness around sustainability. In Japan, media outlets frequently feature dedicated programs on SDGs, while younger generations actively share sustainability efforts via social media. And South Korean manufacturers stand out with 58% emphasizing “Upcycling” and 36% “Ecological Sustainability” associated with gelatin.
Meanwhile, Asia-Pacific manufacturers are innovating rapidly with gelatin-based products. The region is experiencing “rapidly escalating demand for gummy candies,” as noted by Yusuke Yamazaki, Overseas Sales Manager at Nitta Gelatin, with companies seeking differentiation through novel products: 3D gummies, peeling gummies, hard-texture gummies, and gummy supplements. Gelatin plays a crucial role in delicate texture adjustment during manufacturing, and its unique mouthfeel is highly favored by Asian consumers.
North America: Clean-Label & Functionality
North American manufacturers view gelatin as a clean-label, natural ingredient with unique functionality that cannot be replicated by plant-based alternatives. The region's manufacturers believe gelatin is more sustainable (45% of respondents associate gelatin with upcycling) and cost-effective and preferred by a broader range of North American consumers.
Key consumer trends driving gelatin demand in North America include:
- Natural and simple ingredients
- Clean-label products
- Protein fortification
These trends position gelatin as a solution that meets multiple consumer demands simultaneously. As one North American representative, Leo Manning, Director Sales and Marketing at Nitta Gelatin, noted, the survey results confirm “widely held beliefs about ease of use and unique functionality of gelatin vs. potential alternatives.”
South America: Healthy and Sustainable
In Brazil and South America, gelatin enjoys a particularly strong perception—viewed as both healthy and environmentally positive. This perception is grounded in practical market reality: gelatin is commonly found in hospitals, school lunches, special diets, and home cooking, where it is viewed as a natural and versatile ingredient. Affordability makes it widely accessible, a critical advantage in regions where cost-consciousness drives purchasing decisions, as Magali Carregã, Commercial Manager at Gelco International explains.
The survey data reflects this strong positioning among manufacturers: 53% of Brazilian respondents rated gelatin as “healthy”—the highest percentage of any region surveyed. Additionally, 89% are aware of gelatin's positive environmental impact, and 95% generally indicate the importance of natural ingredients.
Local market conditions in South America show also a growing demand for protein-rich dietary supplements, where gelatin plays a central role. Markets with high awareness of health and wellness are driving this trend, while the “clean label” movement—consumers seeking short, natural ingredient lists—further favors gelatin over synthetic additives.
The Path Forward
Across all regions, representatives agree on what sets gelatin apart: it is clean, upcycled, sustainable, with unique functionality that cannot be replicated easily.
GROW's mission is to strengthen global cooperation and knowledge sharing among gelatin manufacturers and the industry. This international survey and the insights from regional representatives reveal the path forward. As consumers worldwide increasingly seek natural, sustainable, functional ingredients, gelatin stands uniquely positioned to meet these needs. The gelatin industry must continue to communicate these benefits clearly, innovate, and adapt to local market realities.
