As the world population grows, food consumption and waste generation are expected to increase. Hence, one of the most challenging global issues is to manage food waste and its effects on the environment. What upcycling potential does the food industry have and can the gelatin industry be an example for creating value in a circular economy?
This question was discussed at GROW’s virtual roundtable on June 15, 2023, at 4 p.m. (CEST). Industry experts discussed upcycling and its potential to pursue a sustainable approach in food production. Furthermore, they answered the question whether the production of gelatin is really living up to its full upcycling potential and what the industry can learn from gelatin production and vice versa.
